Cancer is the eventual outcome of the interaction between genetic factors and environmental exposures. Nutrition and diet, as environmental factors and determinants of growth and body composition can contribute to the risk of some human cancers such as oral cancer. This article explains the ways of carcinogenesis and the effect of diet on this process, especially focusing on head, neck, and oral cancers. To reduce the risk of oral and pharyngeal cancer, especially squamous cell carcinoma, the most common oral cancer, diet must be optimized, primarily to reduce calorie intake, monounsaturated fat, and red or processed meat. Consumption of fruits, vegetables, and cereals, which are the major source of vitamins and fiber, should be adequate in the daily diet. Optimal levels of daily allowance of micronutrients like vitamin C, E, antioxidants, zinc, β- carotene, and folate are effective in prevention of oral cancer. Consumption of fried or broiled Foods and employment of microwave cooking, because of formation of heterocyclic amines, must be avoided because of increasing risks of oral cancer including the salivary gland tumors.

Objective-The high prevalence of esophageal cancer (EC) in northern Iran, along with its unknown etiology, continues to be a major public health problem. Ecological and casecontrol studies have discussed the probable role of dietary factors in this disease. The aim of this study was to determine the relationship between EC and the Type and characteristics of consumed Food and beverages at the time of the study as well as in the past. Methods-A total of 99 cases and 192 controls were enrolled in this study. Clinicians and pathologists referred the patients to the Babol Research Base, which is under the supervision of the Institute of Public Health Research of Tehran University of Medical Sciences. For each patient two controls were selected from their neighbors. Data were collected by means of a structured questionnaire concerning dietary habits. Results-There were no significant differences between the case and control groups in respect to the age, sex and ethnic origin. The case group showed significant differences in family history of cancer other than EC, history of gastroesophageal reflux, habit of rapid drinking of hot tea, and eating of hot Foods. These factors were found to be related to the presence of EC, whereas eating cheese, vegetables, fresh fruits, black pepper and turmeric were found to be protective factors. Conclusion-This study showed some differences in the diet content and habits of patients suffering from EC in comparison to normal controls. Further elaborate studies are required to reveal the true pattern of dietary divergence in these patients. Besides, the authors are aware that recall bias might have distorted some of the results. More objective measures for assessment of diets are recommended.

Background and Objectives: Food insecurity, defined as limited or uncertain access to adequate and nutritious Foods, includes negative effects on physical and mental health. Tension-Type headache, the most common form of primary headache, can significantly affect individuals' quality of life. The two factors are linked to socioeconomic status. Materials and Methods: The aim of this study was to investigate the relationship between Food insecurity and incidence of tension-Type headaches in employees of Isfahan Steel Industry, Isfahan, Iran. Results: Findings showed that employees with a bachelor's degree or lower, less than 7 h of sleep, consumption of less than the recommended quantity of the meat and legumes group (5.5 U/d) and lower Food security were further likely to experience tension-Type headaches (P < 0.05). Logistic regression analysis identified Food insecurity as the strongest predictor of tension-Type headaches. Conclusions: Improving Food security, increasing educational attainment and ensuring adequate sleep may help decrease the incidence of tension-Type headaches. Additionally, maintaining balanced consumption of Food groups, especially meats and legumes, could decrease the occurrence of tension-Type headaches. Further prospective studies are necessary to investigate the causal relationships between Food security and tension-Type headaches.
